Healthy Paella

You can make this vegetarian or not! If you want to add meat you can use sausage or shrimp.

  • Olive oil
  • ½ a large red onion
  • 2 Garlic cloves minced
  • ½ a zucchini- diced
  • ½ a red bell pepper diced
  • 1 Cup Cherry tomatoes
  • 1 Cup brown rice
  • 2 Cup vegetable broth(you can use low sodium chicken broth)
  • ⅛ tsp ground Turmeric
  • ½ tsp dried or fresh Parsley
  1. In a large pan, heat the oil
  2. Add the onion and garlic and sauté
  3. Add the Zucchini and red bell pepper and cook until cooked through yet still some crunch
  4. Add tomatoes and mix together
  5. Add the uncooked rice, broth and turmeric
  6. Cook on medium uncovered for approx 20 minutes.
  7. The rice should be cooked through and absorb all liquid.
  8. Sprinkle with parsley
  9. Serve and ENJOY!!!

I love this dish on a cold day but I have eaten it cold on a hot day! You can have this for lunch or dinner.
